Sweet potatoes are a fantastic alternative to regular potatoes as they're packed with vitamins A, C and E, and they're brimming with antioxidants. Take advantage of this venerable vegetable by cooking up a batch of healthy sweet potato fries (roasted, not fried!) accompanied by Great Harvest in Austin's world-class marinara sauce.

Marinara Sauce


2 ; tablespoons olive oil
1 medium onion (finely diced)
5 garlic cloves (minced)
; cup of fruity, sweet red wine
2 tablespoons marjoram (minced)
1 tablespoon thyme (minced)
1 can crushed tomatoes
Salt and pepper


Heat the oil over a medium flame, then saute the onion for 8 minutes or until translucent. Season with a pinch of salt and pepper. Add the garlic and saute for a further 3 minutes, then add the wine and simmer until it has reduced down by half. Mix in the rest of the ingredients and stir well. Allow the sauce to simmer for 30 minutes, stirring very occasionally, then check and adjust the seasoning. Pour the sauce into your blender or food processor (if you'd like it to be smooth, that is!) and blend until it's your desired consistency. Pour it back into the pan and simmer for a further 5 minutes. Take it off the heat and set it to one side.

Sweet potato fries

2 lbs. sweet potatoes
2 tablespoons olive oil
3 tablespoons Parmesan (grated)
2 tablespoons parsley (chopped)
1 garlic clove (minced)
Salt and pepper (coarse sea salt is best if you can get it)


Preheat your oven to 450 degrees Fahrenheit. While it heats, wash and dry your sweet potatoes (don't peel them; the skin is delicious and contains tons of nutrients!), then cut them lengthwise into fries. Place your fries on a baking sheet, drizzle with oil and sprinkle with salt, then toss them around to coat them well. Spread them evenly, then roast for 25 minutes, tossing them around halfway through to roast them evenly. Mix the herbs, cheese and garlic in a large bowl, add the warm fries and stir them around to coat them evenly. Serve alongside your marinara sauce and enjoy yourselves!
