 While soups are a delicious treat for your taste buds any day, any time, they can be a little bit too hot when the temperatures outside are high. Luckily, there's an alternative: Spanish gazpacho, which is a type of soup that's best served cold. This means that if you're craving some soupy goodness, but don't want to wait until the weather cools down to enjoy it, you can follow the recipe below to make gazpacho in your home!

How to Make Gazpacho

Ingredients

  • Cucumber
  • Tomato
  • Red Bell Peppers
  • Garlic
  • Sherry Vinegar
  • Extra-Virgin Olive Oil
  • Salt and Pepper
  • Bread

Instructions

  1. For starters, wash, seed, and dice the bell peppers, tomatoes, and cucumbers.
  2. Once you've done that, add those same ingredients to a blender and start blending them. Keep going until it's all smooth.
  3. After that, add the vinegar, garlic, salt, and pepper to the concoction. Add in a little bit of olive oil to give some texture to the mixture.
  4. Then, strain the soup into a large bowl, and place said bowl in the refrigerator. You will have to let it rest there overnight, so it can be extra flavorful.
  5. The next day, take the gazpacho out and add in more salt and pepper as you deem necessary.
  6. While that is going on, toast up a few slices of bread, so they're golden and crunchy.
  7. Lastly, serve the gazpacho with bread and enjoy!
