Real Food. Real People.

For some reason, broccoli has a bad reputation, even though it is a delicious vegetable that contains a slew of vitamins and minerals your body needs to work properly. If you're one of those who can actually appreciate its taste, however, you're in luck, since it's now in season. To help you enjoy it more this spring, in this post, you'll find an easy recipe for scrumptious broccoli soup.

How to Make Scrumptious Broccoli Soup

The Ingredients

  • 8 cups of broccoli (chopped)
  • 4 tbsp of unsalted butter
  • 4 cups of chicken broth
  • 3 tbsp of all-purpose flour
  • 4 cups of chicken broth
  • 1 onion (chopped)
  • 1/2 cup of cream
  • Salt and pepper (to your liking)
  • Homemade, whole grain croutons (recipe here)

The Steps

  1. Start by grabbing a pot, melting the butter in it at medium heat, adding the onion and broccoli, and having them cook until the onions are mostly transparent and tender.
  2. Once the onion is ready, it's time to incorporate the flour into the mix. You'll have to keep it there until you see it turn a lighter color.
  3. Next up, pour in the chicken broth into the pot, and allow it to sit there until it begins to boil. After which, it will be time to add the cream in.
  4. When all of the ingredients are in and the broccoli has softened quite a bit, start pouring the mixture into a blender little by little and set it to puree. This would be the time to add the salt and pepper to your liking.
  5. Return the soup to the pot, and mix and stir it until it's steamy, thick, and bubbly.
  6. Finally, you just need to serve the soup and add the delicious homemade croutons to take your meal to the next level!
