How to Prepare Fresh Tomato and Basil Pasta Sauce

What You'll Need

  • 8 small tomatoes (chopped)
  • 1 garlic clove (minced)
  • 1 large onion (chopped)
  • 1 handful of fresh basil (chopped)
  • 1 teaspoon of vegetable stock
  • 1 tablespoon of extra virgin olive oil
  • 1 tablespoon of tomato purée
  • Salt and pepper (as preferred)

What You'll Do

  1. Start by heating up the oil in a saucepan. Then, add in the garlic and onions. Allow them to cook until the onions are transparent.
  2. Next up, add in the tomatoes, vegetable stock, and purée. Bring this concoction to a boil. Afterwards, let it sit there on a low flame, around 40-60 minutes.
  3. Once that's done, stir the saucepan and incorporate the basil. This is also the time to season with salt/pepper.
  4. If you like your pasta sauce to be smoother, blend it well with a food processor.
  5. Serve the sauce over a plate of pasta. You can add Parmessan cheese, green olives, and even some slices of toasty whole grain bread to make your meal taste that much better!
