It's the holiday season, which means you can indulge yourself a little more than usual! If you're feeling decadent one morning, whip up a batch of these caramel cake pancakes, recipe courtesy of Great Harvest in Austin. Make a big batch of the caramel sauce; it will definitely come in handy through the holidays!

The syrup:

; cup butter
1 cup sugar
1 teaspoon lemon juice
; cup cream

Melt the butter in a heavy-bottomed saucepan over a medium heat. Add the sugar and lemon juice and continue to cook, stirring constantly. When the mixture begins to turn a caramel color, add the cream slowly, stirring continuously. Continue to cook for a few minutes until it thickens to the right consistency. Once the unused sauce is cool, you can refrigerate it in an airtight container to use later.

The pancakes:

2 cups self-raising flour
; cup sugar
1 cup milk
2 large eggs
3 tablespoons melted butter
2 teaspoons vanilla extract

Sift together your flour and sugar. In another bowl, whisk together the milk, butter, eggs, sugar and vanilla. Gradually stir the wet ingredients into the dry ingredients, but don't mix too thoroughly- the pancakes will be better if the batter is still a little lumpy (really!). Heat up a non-stick skillet or buttered pan, and pour around ; cup batter in. Cook until bubbles start to form on the surface, then flip it and cook the other side.

Serve with the caramel syrup and enjoy yourself immensely!
